-- Identify product features (plant-based, shelf stability, preservatives, sweeteners, upscaling, regulatory aspects (EFSA, FDA etc), health and nutrition optimisation for target customers, IP aspects, etc)
-- Develop prototype (minimal viable product) for testing
-- Characterise prototype properties
-- Verify nutrition claims, customer acceptance and possibly health effect (see clinical verification),
-- Adjustments for upscaling
-- Verify after upscaling
